Dowdle Construction completed the 2,080-square-foot build-out of Gordo’s Taqueria at 515 Merritt Street, converting an existing core and shell space into a fast-casual, open-kitchen restaurant concept. This project marks the brand’s first location outside of California.

 

Scope of work included full MEP rough-ins, installation of new HVAC units to support kitchen equipment and coordination of finishes throughout the space. The open kitchen features two stainless-steel hoods over the cook line and a customer-facing service area that allows guests to watch meals prepared and customize their orders. Back-of-house spaces include dry storage and a walk-in cooler.

 

The dining area includes a built-in banquette with movable tables and chairs, finished with luxury vinyl flooring, green tile half-height walls and a brick veneer soffit over the kitchen. Lighting consists of pendant chandeliers and track lighting. A stainless-steel service counter with an overhead door connects the interior dining area to an outdoor patio with flexible seating.
